Located on the Shikoku Island, this prefecture has only around 20 kura. While sakes from Niigata are dry and crisp, sake from Kochi is driest, high in acidity, but more approachable and smooth. Quite dry and hearty on the palate it favours those who like solid junmais. It has a unique unripe strawberry flavour with a hint of rose on the nose.
Food matching: The acidity on this sake works well with Sashimi, Maki rolls and shellfish.
